A work of goldsmith
From vine to glass.
In the vineyards, the best possible match between grape variety and terroir is guaranteed to enable the wines to express all their quintessence. Since the 90s, a meticulous selection of parcels has been carried out to preserve the quality of the grapes and the specific characteristics of each terroir. That’s why we produce over 70 different cuvées each year.
The grapes are harvested exclusively by hand. Precise, meticulous work is carried out day after day in the heart of Alsace’s vineyards.
This precision work continues in the cellar, where special attention is paid to the development of each cuvée. The grapes are pressed in whole bunches on pneumatic presses to avoid crushing. The juices are separated to optimise the quality of our wines. After static settling, the wines are fermented under temperature control, and then matured on fine lees for several months.
Depending on the cuvée, our wines can wait for years in the cellar before being marketed.

From vine to bottle, every stage of our production process is guided by a constant concern to minimize our ecological footprint. We favor gentle growing methods, limit the use of inputs, and encourage innovation to create exceptional wines, while preserving the richness of our terroir.

The Cave is committed to a responsible and sustainable approach, through a strict quality charter signed by all operators in 2002. Protecting people and the environment is at the heart of our concerns. Throughout the vineyard, we guarantee total traceability, and we use sustainable viticulture methods to limit yields. In 2019, Cave de Ribeauvillé became the first winegrower to have its entire surface area certified as High Environmental Value. To take its virtuous development even further, in 2004 the winery embarked on an organic viticulture and vinification process. Today, a third of total production is organic.
