The grapes are harvested exclusively by hand.
Whole bunches are pressed in pneumatic presses to avoid crushing. The juices are separated to optimise the quality of our wines. After static settling, the wines are fermented under temperature control and then matured on fine lees for 7 months.
Slightly smoky on the nose, ripe fruit notes such as apricot and wedge predominate. Generous and well-structured on the palate, it offers great complexity, with a spicy, persistent, precise and clean finish.
What to marry it with?
Enjoy this Pinot Gris Vieilles Vignes with foie gras, or a tajine with quince or apricots. It goes very well with spicy and sweet and sour dishes.
