The grapes are harvested exclusively by hand. Whole bunches are pressed in pneumatic presses to avoid any crushing and to respect the raw material as much as possible. The juices are separated to optimise the quality of our wines. After static settling, the wines ferment under temperature control at around 21°-22°, and are then matured on fine lees for 3 to 6 months. After filtration, the wines are bottled all at once and matured in our cellars for a minimum of 3 years.
This Pinot Gris has an intense, rich, fruity nose with aromas of peaches. The attack is supple but the finish remains fresh, thanks to a clean, structured acidity.
What to marry it with?
This Pinot Gris is ideal as an aperitif or with pan-fried foie gras.
It is also perfect with hard cheeses such as ewe’s milk tomme.
