The grapes come from vines grown using organic methods, with no chemical treatments and low yields. The grapes are harvested exclusively by hand.
The grapes are destemmed before being placed in vats for punching down. They are left to macerate for 3 to 5 days, while being ‘pigmented’ 1 or 2 times a day. After a day, we remove 5-10% of the juice from the maceration vat to concentrate the rest of the cuvée. After devatting, the grapes are pressed. Malolactic fermentation takes place in large wooden tuns, where the wine remains until bottling.
It has a very deep, dark colour. The nose is expressive and complex, with notes of black cherry and vanilla. Well-balanced on the palate, with fine, silky tannins.

Its subtle aromas of red fruits, cherries and spices make it an ideal companion for Mediterranean cuisine, grilled poultry dishes and traditional charcuterie. Enjoy this organic Pinot Noir with red meat in sauce or venison.
