The grapes are harvested exclusively by hand. The destemmed grapes are macerated for 7 days. Bleeding is then carried out after vatting. During the first few days, pumping over and punching down are carried out daily. Malolactic fermentation takes place in vats, after which the wine is left to rest on its fine lees for 9 months before bottling to refine its aromas.
Garnet-red colour with a lovely sheen. On the nose, notes of ripe red berries (black cherry). The palate is supple, pleasant and fruity, with aromas of red fruit. The finish is of great finesse: this is a gourmet wine!
What to marry it with?
This straightforward, powerful wine perfectly captures the aromas of Pinot Noir without any barrel ageing. Serve with poultry (duck breast, turkey) or grilled red meat (prime rib).
