Terroir
The grapes are harvested exclusively by hand. The three grape varieties are harvested at the same time, pressed together and then vinified at the same time. Whole bunches are pressed in pneumatic presses to avoid any crushing and to respect the raw material as much as possible. The juices are separated to optimise the quality of our wines. After static settling, the wines ferment under temperature control at around 21°-22°, and are then matured on fine lees for 7 to 9 months. After filtration, the wines are bottled all at once and matured in our cellars for a minimum of 3 to 5 years.
Intense, complex and distinctive on the nose, with citrus aromas and a fine minerality. Beautifully balanced and surprisingly long on the palate, perfectly enhanced by fine, elegant acidity.
What to marry it with?
Enjoy this Riesling with shellfish, fish terrines, raw fish (sushi), sea and freshwater fish.
It also goes well with poultry in sauce or roast, fresh cheeses (goat’s cheese, fromage blanc, fresh Munster, Corsican broccio, etc….).
